The price of beets rose sharply in Ukraine at the end of May, to twice what they were a year ago.
The price of beets on June 2, 2022, was 18-25 UAH (60-85 cents in USD) per kg, twice what it was in early June 2021. Experts attribute the price increase to reductions in production by Ukrainian farmers, who have already sold all of their available beets.
Poland, a major exporter of beets to Ukraine, has also increased their prices due to the ongoing war, due to rising fuel costs, reflecting the tricky logistics of entering Ukraine.
As a result of all this, the price of borshch has increased by 7 percent, further squeezing a country struggling against invasion.
